Walnut Flapjack

Walnuts are one of the most beneficial nuts and provide the largest source of Antioxidants in the nut category.

Antioxidants have a host of favorable health-giving qualities that include anti depressants and elegiac acid, which is present in walnuts and support the immune system.

The other significant ingredient present in this Walnut Flapjack recipe is that it provides a great source of Omega-3 fatty acids also obtained from the walnuts, which offer protection from cardio vascular problems.

Walnuts also have anti-inflammatory benefits and the inclusion of walnuts in the diet can aid inflammatory skin diseases such as, eczema and psoriasis


  • 70g Margarine
  • 50g Brown Sugar
  • 1 heaped tablespoon Golden Syrup
  • 175g Porridge Oats
  • 1 teaspoon Cinnamon (optional)
  • 1/2 teaspoon Baking Powder
  • 50g Chopped Walnuts


Line a round 20cm cake tin with greaseproof paper. Place the oats, walnuts, baking powder and cinnamon into a large mixing bowl. Put the margarine, sugar and syrup into a saucepan and place on medium heat. Stir to prevent the sugar from burning until all the ingredients have melted together.

Pour the sugar mixture onto the oats, walnuts, baking powder and cinnamon and stir until well blended. Transfer the mixture into a cake tin and flatten with the back of a spoon and place into the oven at Gas mark 4, 180° for about 20 to 25 minutes. Remove from the oven and place on a cooling rack. Cut the flapjack into slices while hot and leave to cool. Remove the flapjack from the tin when it is completely cold.
