You don’t have to wait for autumn to enjoy the deep flavor of pumpkin. These pumpkin flapjacks are good all year long, and they are good with any topping you desire. I suggest, you try serving them with syrup and chopped walnuts sprinkled on top. What a great way to start your day. You will find them easy to make by using canned pumpkin.

Ingredients
- 1 cup canned pumpkin
- 1 ½ cup milk
- 1 egg
- 2 tablespoons canola oil
- 2 tablespoons vinegar
- 2 cups flour
- 3 tablespoons brown sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- ½ teaspoon salt
Method
Combine pumpkin, milk, egg, oil, and vinegar in a medium size bowl. Mix well.
In a large bowl combine the flour, brown sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, ginger, and salt. Mix well.
Combine both mixtures.
Cook on a griddle until it starts to bubble. Flip and continue to cook until the other side is golden brown.
Pumpkin Flapjacks are ready.
