The next time you’re stuck with a couple over ripe bananas don’t throw them out. Serve them up in this recipe for banana flapjacks. They will satisfy your hungry crowd with the creamy texture and pleasing taste. Plus you will be adding some fruit to their daily diet. You can mash the bananas with a fork or in a blender. For a special touch you could add some chopped nuts.

Ingredients
- 1 cup flour
- 2 tbsp. sugar
- ¼ tsp. salt
- 2 tsp. baking powder
- 1 egg
- 1 cup butter milk
- 2 tbsp. butter, softened
- 2 ripe bananas, smashed
Method
1. Combine flour, sugar, salt, and baking powder, and stir.
2. Make a well in the middle of the dry ingredients and add the egg, milk, butter, and bananas.
3. Stir well.
4. Drop by ¼ cup onto griddle.
5. Cook until it bubbles them turn and cook until the other side is golden brown.
6. Banana Flapjacks are ready.
